Tender Cranberry Raisin Oatmeal Cookies

     最近很懶, 縂是提不起勁寫blog, 其實巳
有好幾款食譜的相片在手机内, 只是未有文
字; 今次的食譜是源自King Arthur Flour,
我是因應中國人口味, 省去了部份香料.....
這款曲奇纖維質豐富, 感覺上好像比較健康,
做出來的效果唔錯。


Ingredients :

6 ounces          unsalted butter
1/4 cup             vegetable shortening
1 1/2 cup          brown sugar
1 teaspoon       baking powder
1/2 teaspoon    baking soda
1 teaspoon       ground cinnamon
1/2 teaspoon    ground ginger
1/2 teaspoon    salt
1 tablespoon    vanilla extract
2 large               eggs
3 tablespoons   maple syrup
1 cup                  dried cranberry
1 cup                  raisins
1 cup                  chopped almonds
2 cups                all purpose flour
3 cups                old fashioned rolled oats



In a large mixing bowl, combine the
butter, shortening, Sugar, baking powder, baking soda, spices,  salt, vanilla, beating until smooth.



Add the eggs one at a time,  beating well after each addition;



then add the syrup.



Stir in the fruit and nuts,







then the flour, beating gently until well
combined.





 Add the oats last, making sure they're
thoroughly distributed throughout the
bowl.



A tablespoon cookie scoop will make
traditional 2 1/2"cookie.



Drop balls of dough onto the prepared
sheets, leaving about 2"between them.



Bake the cookie until they're just
barely set on top - about 12 minutes.
